Salad In A Jar

salad-in-a-jarSalad in a Jar!!   – Saves space in the fridge too!!

BOTTOM to TOP:  arrange ingredients in a large mouth mason jar, store in fridge for up to a week,

When ready to eat: shake jar, place on plate and add meat if desired, ENJOY!

Dressing: ¼ to ½ cup (see recipe below or use your favorite healthy dressing)

Shredded carrots

Cherry tomatoes

Sunflower seeds

Cucumbers

Peppers

Baby spinach or chopped romaine lettuce

Creamy Herb Dressing:

1 cup cashews, macadamias or combo (soak in water for 1 hour than drain)

Add in blender with:

¾ cup thai coconut water or regular water

1/3 cup lemon juice

2 cloves of garlic

1 tsp. onion powder

1 tsp. dried parsley

1 tsp. dried dill

1 tsp. fresh chopped chives

½ tsp. sea salt

¼ pepper

Blend in mixture, store in jar in fridge.
